"Diana, just a quick heads up to let you know we are still using your cookbook and the guys will often be heard saying what would Diana say about this or that....really good feed back... I made your potato salad and the oriental coleslaw on Sat. for a family luncheon and had rave reviews so thanks again."
Pink Peppercorn Pork Medallions with Creamy Kale and Sweet Potato Mash
Mongolian Beef with Charred Cabbage, Carrot, and Quinoa PIlaf
I recently had the opportunity to try out the services of a new company called Fresh Prep. They are a home meal delivery service of freshly prepared ingredients ready to be assembled and cooked at home. I personally love to cook, plan meals, do the shopping and just be in the kitchen chatting with the kids, so when the idea was proposed to me I thought “why would I want to do that?”. Well, I was pleasantly surprised. First, I went on-line to select the 2 meals I wanted delivered the following Tuesday. Pink Peppercorn Pork Medallions with Creamy Kale and Sweet Potato Mash and Mongolian Beef with Charred Cabbage, Carrot, and Quinoa PIlaf. 2 meals I likely would not cook mid week as they sounded time consuming. As it turned out, the following week was an unusually busy week, I was on carpool duty for soccer for my daughter and I had to drive to trampoline in Squamish for my son. Both require quick turnaround for meals. I was grateful to receive a text message on the Tuesday that my meals were being delivered in 17 minutes at my front door as I had been out walking the dog at the time. When I arrived home to check out the delivery it was like opening my stocking at Christmas. Each ingredient perfectly measured, chopped and packaged in tiny containers and bags. I read the recipes, selected the one to cook that night and literally it was on the table in 30 minutes, just as the recipe described. While preparing the Mongolian Beef I also steamed some extra vegetables to go with it as I was feeding a family of 4. It was delicious and well accepted by my critics. As I thought about the dinner, I realized that I didn’t feel as rushed as usual and the ready to go ingredients allowed for more time to chat with the kids so in fact I was pleasantly surprised. It was healthy, tasted great, easy and fresh. Without all the prep. Well done Fresh Prep! Thanks for the trial run.
