Papaya and Avocado Salad - Makes 8 servings

This is Diana's all-time favourite salad! The sweetness of the papaya, the creamy texture of the avocado and the bite of red onion form a fabulous taste combination when eaten in the same bite.

 

Dressing

1/4 cup white sugar 63 ml
1/2 tsp dry mustard powder 2 ml
2 tsp salt 10 ml
2 Tbsp papaya seeds 30 ml
1/2 cup white wine vinegar or tarragon vinegar 125 ml
1/2 cup Canola oil 125 ml

Salad

1 Large head Romaine lettuce 1
1/4 Red onion, thinly sliced 1/4
1 Papaya 1
1 Avocado 1
2 Green onions finely chopped 2
  • Blend all ingredients for dressing in food processor until papaya seeds look like ground pepper.
  • Wash and tear lettuce leaves
  • Slice papaya into slices leave 5 cm strips
  • Cut avocado into 1 1/2 cm cubes (cut in skin and spoon out)
  • Add sliced red onion
  • Toss with dressing, sprinkle with green onions. Serve immediately.

Per serving: Calories: 216; Protein 1 g; Carbohydrate 14 g; Fat 18 g.

Tip: Papaya seeds contain pepsin, which is a digestive enzyme that can help improve digestion.
