Morning Glory Muffins

Ingredients:

Dry Ingredients:

1 cup whole wheat flour

1 cup white flour

2 tsp baking soda

2 tsp cinnamon

¼ tsp salt

 

Fruit, vegetables and nuts:

2 cups grated carrots

½ cup raisins

½ cup nuts

½ cup coconut

1 grated apple (peeled)

 

Wet Ingredients:

3 eggs

1/3 cup oil

½ cup apple sauce

2 tsp vanilla

 

 

Method:

  1. In large mixing bowl combine dry ingredients
  2. Stir in fruit, vegetables and nuts
  3. In a separate bowl mix wet ingredients
  4. Add wet to dry and combine until just moistened.
  5. Serve into greased muffin tin and bake at 350 degrees for 20-25 minutes
