POULTRY SAFETY IN CANADA

Is it safe to eat poultry in Canada?  The experts say yes.  The Canadian Food Inspection Agency has import restrictions on poultry and non-processed poultry products from any of the countries affected by avian flu. 

Avian Influenza (AI), also known as bird fly or avian flu, is a viral infection which can affect birds.  Many wild birds carry AI without becoming ill, due to a natural resistance, but the disease is significant to domestic poultry. 

H5N1 is a viral avian flu that can be killed by cooking to 162 degrees F.  Cooked poultry should be cooked to 170-176 degrees for proper food safety.  Use a meat thermometer. 

The AI has infected 120 people worldwide (most of whom have had direct contact with infected birds).  AI has killed 64 people worldwide.  Just to keep this in perspective, the normal human strains of flu killed 1500 Canadians last year.
