"Diana, just a quick heads up to let you know we are still using your cookbook and the guys will often be heard saying what would Diana say about this or that....really good feed back... I made your potato salad and the oriental coleslaw on Sat. for a family luncheon and had rave reviews so thanks again."

Smoothies for people on the go
With kids back to after school sports and everyone getting back to a fitness routine, eating right and having good food Smoothies are the perfect snack for people on the fly. Simply blend together your favorite fruit and milk, yogurt or soymilk and there you have it. You can get more creative if you like. Bananas add a lovely smooth and creamy texture whereas orange juice will add some zing. Ice will make a refreshing summer smoothie and chocolate milk is a nice treat. Try freezing your smoothies in popsicle holders for a healthy alternative to a popsicle.
Some of my favorite recipes include:
1. The Pineapple Banana made of 1 cup So Good Omega soymilk, ½ cup pineapple juice, 1 cup frozen pineapple nibs, 1 frozen banana and 1 tsp coconut extract.
2. The Tofu Orange Banana made of 1/3 cup soft or dessert-style tofu, 1 cup OJ and a frozen banana.
3. The Peanut Butter Banana made of 1 cup skim milk, 1-2 tbsp peanut butter and a frozen banana.
4. The Strawberry Milkshake made of 1 cup skim or vanilla soy milk and 1/3 cup frozen strawberries.
